Ingredients:
½ Ham with bone in. Not a spiral.
2 – Cans of Pineapple Juice. Shake well before using. ¼ cup to the side.
4 to 8 – Cups Water
1 – Tbsp. divided Whole Cloves.
1 – ¼ Tsp. Ground Cloves.
1 Cup Honey
½ - Cup Mustard. We use our Salem's "Hautingly Hot" mustard mixed with a regular yellow mustard
Directions:
Put 10 or more Whole cloves into Ham & place on side
In a large pot put 2 cans of shaken well (minus the ¼ cup) Pineapple Juice.
Put Approx 3 cups of water into pot & start heating (stir frequently)
Once heated but not boiling place Ham into pot.
Fill pot with more water until Ham is covered.
Cover & bring to a boil. Boil for approx. 10 to 15 minutes.
Until you see most of the thick fat coming off the ham
Take Ham out & place on large cutting board. Will drip a lot. Keep 2 – cups of water mixture.
Take off as much of the thick fat as you want. Put new Whole Cloves in Ham
Heat oven to 350 degrees F.
In a bowl mix together, Honey, Mustards, ground Cloves & ¼ cup Pineapple juice & mix well.
Should still be thick but pourable.
You will need a Large Roaster that will hold the Ham with a cover.
If you have an insert for the bottom of Roaster, Use it. If not that’s fine.
Place Ham into Roaster. Flat side down.
Slowly pour Honey, Mustard mixture over Ham.
Pour in on the side of the Ham into Roaster some of the 2 – Cups of water from pot.
Fill to just the bottom of insert. If no insert, about ¼ inch of bottom of Ham.
Cover & place into heated oven. (for approx 30 minutes)
Keep basting every 15 minutes. Twice will be enough. Should be a little brown on top by now.
Take Ham out of Roaster & place on Cutting board to rest. Watch the juice.
Take remainder of juice from Roaster & place into a small pot & boil down until thicker.
This will make an awesome Jus for dipping or Sandwiches.
